  • Total Time: 1 hour 15 minutes - 1 hour 25 minutes
  • Yield: 1 loaf (about 10 slices)

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • Optional: chopped nuts or chocolate chips for added texture

Instructions

  1. Preheat oven to 350°F (175°C). Grease a standard loaf pan.
  2. Mash ripe bananas in a large bowl until smooth. Add melted butter, sugar, eggs, and vanilla extract; mix well.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually fold into the banana mixture until just combined.
  4. Mix remaining cinnamon with a few tablespoons of sugar. Pour one-third of the batter into the loaf pan. Sprinkle half of the cinnamon sugar mixture on top.
  5. Add remaining batter and swirl with a knife to create a cinnamon ribbon pattern. Repeat with the remaining cinnamon sugar mixture.
  6. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a more intense cinnamon flavor, increase the amount of cinnamon in the swirl.
  • Chopped nuts or chocolate chips can be added to the batter before baking for extra texture.
  • Store leftovers in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
