- 1 pound ground beef
- 1 cup orzo pasta
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup diced pickles
- 1/2 cup diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic; cook until translucent.
- Add ground beef, season with salt and pepper, and cook until browned.
- Stir in orzo pasta and cook for 2 minutes.
- Pour in beef broth, bring to a boil, then reduce heat to low, cover, and simmer until orzo is tender and liquid is absorbed (about 10 minutes).
- Remove from heat, stir in shredded cheese until melted.
- Top with diced pickles and tomatoes, garnish with fresh parsley, and serve hot.
Notes
- You can substitute ground chicken or turkey for a leaner option.
