A delicious, cheesy ground beef enchiladas cooked in one pan, perfect for a quick and satisfying family meal.

Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup enchilada sauce
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat.
  3. Stir in chili powder, cumin, salt, pepper, and half of the enchilada sauce. Simmer for 5 minutes.
  4. Fill each tortilla with the beef mixture and roll up. Place seam side down in a baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with cheese.
  6. Bake for 20 minutes until cheese is melted and bubbly.
  7. Garnish with cilantro before serving.
