- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup enchilada sauce
- 8 small flour tortillas
- 2 cups shredded cheddar cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat.
- Stir in chili powder, cumin, salt, pepper, and half of the enchilada sauce. Simmer for 5 minutes.
- Fill each tortilla with the beef mixture and roll up. Place seam side down in a baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with cheese.
- Bake for 20 minutes until cheese is melted and bubbly.
- Garnish with cilantro before serving.
Notes
- You can substitute shredded chicken or vegetables for a different flavor.
- For a spicier version, add diced jalapeños.
