These cheesy broccoli pinwheels are a perfect toddler meal or snack, combining flaky pastry with nutritious broccoli and melty cheese. Easy to make and fun to eat!

  • 1 sheet puff pastry, thawed
  • 1 cup fresh broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Sauté broccoli until tender, about 3-4 minutes. Season with salt and pepper. Let cool.
  3. Roll out the puff pastry sheet on a lightly floured surface. Spread the cooled broccoli evenly over the pastry.
  4. Sprinkle shredded cheddar and Parmesan cheese over the broccoli.
  5. Roll up the pastry tightly from the long side, then slice into 1-inch thick pinwheels.
  6. Place pinwheels on the prepared baking sheet. Brush the tops with beaten egg.
  7. Bake for 15-18 minutes until golden brown and crispy. Serve warm.
