- 2 pounds of smoked sausage, sliced into rounds
- 4 large russet potatoes, peeled and diced
- 1 cup of shredded cheddar cheese, or your favorite melting cheese
- 1 packet of ranch seasoning mix (or homemade ranch dressing mix)
- 1 cup of sour cream
- 1/2 cup of milk or heavy cream
- 2 tablespoons of olive oil or melted butter
- Salt and freshly ground black pepper to taste
- Fresh parsley or green onions for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the potatoes and smoked sausage by peeling and dicing the potatoes, and slicing the smoked sausage into rounds.
- In a large skillet, heat olive oil or melted butter over medium heat, then add diced potatoes and cook until they begin to soften and turn golden, about 8-10 minutes.
- In a mixing bowl, whisk together sour cream, ranch seasoning mix, milk, salt, and pepper until smooth.
- In a large mixing bowl, combine the cooked potatoes, sliced smoked sausage, and creamy ranch mixture, mixing well.
- Transfer the mixture into a greased baking dish and sprinkle shredded cheddar cheese on top.
- Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
