Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 package (9 oz) refrigerated tortellini
  • 2 cups fresh spinach, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove sausage and set aside.
  2. In the same pot, add chopped onion and cook until translucent. Add minced garlic and cook for 1 minute.
  3. Pour in chicken broth and add diced tomatoes, thyme, salt, and pepper. Bring to a boil.
  4. Add tortellini and cook according to package directions, about 3-5 minutes.
  5. Stir in cooked sausage and chopped spinach, cooking until spinach wilts. Adjust seasoning as needed.
  6. Serve hot, garnished with fresh basil or parsley.
