- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 package (9 oz) refrigerated tortellini
- 2 cups fresh spinach, chopped
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove sausage and set aside.
- In the same pot, add chopped onion and cook until translucent. Add minced garlic and cook for 1 minute.
- Pour in chicken broth and add diced tomatoes, thyme, salt, and pepper. Bring to a boil.
- Add tortellini and cook according to package directions, about 3-5 minutes.
- Stir in cooked sausage and chopped spinach, cooking until spinach wilts. Adjust seasoning as needed.
- Serve hot, garnished with fresh basil or parsley.
Notes
- You can substitute turkey or chicken sausage for a leaner option.
- Add a splash of cream for a richer broth.
