  • 1 pound Italian sausage
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 package (9 oz) tortellini
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the sausage in a large pot over medium heat, then remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant.
  3. Add chicken broth, diced tomatoes, carrots, celery, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes until vegetables are tender.
  5. Cook tortellini separately according to package instructions, then drain.
  6. Add cooked sausage and tortellini to the broth. Heat through for 5 minutes.
  7. Serve hot, garnished with fresh parsley.
