- 1 pound Italian sausage
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 package (9 oz) tortellini
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Brown the sausage in a large pot over medium heat, then remove and set aside.
- In the same pot, sauté onion and garlic until fragrant.
- Add chicken broth, diced tomatoes, carrots, celery, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15 minutes until vegetables are tender.
- Cook tortellini separately according to package instructions, then drain.
- Add cooked sausage and tortellini to the broth. Heat through for 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- You can substitute sausage with ground turkey for a lighter option.
- Ready in approximately 30 minutes, perfect for weeknight dinners.
