- 8 oz angel hair pasta
- 1 lb large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook angel hair pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove shrimp and set aside.
- In the same skillet, add asparagus and cook until tender-crisp, about 3-4 minutes.
- Return shrimp to the skillet, add cooked pasta, lemon juice, salt, and pepper. Toss gently to combine and heat through.
- Sprinkle with Parmesan cheese and chopped parsley before serving.
Notes
- You can substitute the shrimp with scallops or chicken for variation.
- Add a pinch of red pepper flakes for a spicy kick.
- Serve with a side of crusty bread for a complete meal.
