  • 8 oz angel hair pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook angel hair pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove shrimp and set aside.
  4. In the same skillet, add asparagus and cook until tender-crisp, about 3-4 minutes.
  5. Return shrimp to the skillet, add cooked pasta, lemon juice, salt, and pepper. Toss gently to combine and heat through.
  6. Sprinkle with Parmesan cheese and chopped parsley before serving.

Notes

  • You can substitute the shrimp with scallops or chicken for variation.
