- 4 slices bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 16 oz gnocchi
- 2 tbsp unsalted butter
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, cook chopped bacon over medium heat until crispy. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic in bacon fat until translucent.
- Add chicken broth and bring to a boil.
- Stir in gnocchi and cook until tender, about 3-5 minutes.
- Reduce heat and stir in heavy cream, shredded cheddar, and butter until cheese melts and soup is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with crispy bacon bits and chopped parsley.
Notes
- You can substitute turkey bacon for a leaner option.
- For a thicker soup, blend a portion of the cooked gnocchi with the broth before adding cheese.
- Use freshly grated cheddar for optimal flavor.
