- 6 slices of bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups half-and-half
- 2 cups shredded cheddar cheese
- 24 oz potato gnocchi
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Cook chopped bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, sauté diced onion and garlic until translucent.
- Add chicken broth and bring to a simmer.
- Stir in half-and-half and shredded cheddar cheese until melted and smooth.
- Add gnocchi and cook until tender, about 3-5 minutes.
- Return bacon to the soup, season with salt and pepper.
- Serve hot, garnished with chopped chives.
Notes
- Use good quality cheddar for richer flavor.
- Gnocchi can be substituted with tortellini for variation.
- For extra flavor, add a pinch of smoked paprika.
