- 1 cup orzo pasta
- 2 cups broccoli florets
- 2 cups shredded sharp cheddar cheese
- 2 cups vegetable broth
- 1 cup milk
- 2 tablespoons butter
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat and sauté garlic until fragrant.
- Add the orzo and cook, stirring frequently, for 2 minutes.
- Pour in vegetable broth and milk, bring to a boil.
- Reduce heat and simmer for 10 minutes, stirring occasionally, until orzo is tender and sauce thickens.
- Add broccoli florets and cook for another 3-4 minutes until broccoli is tender.
- Stir in shredded cheddar cheese until melted and creamy.
- Season with salt and pepper to taste, serve hot.
Notes
- You can substitute cheddar with a mix of your favorite cheeses for a different flavor.
- For extra creaminess, add a splash of heavy cream at the end.
