A rich and creamy one-pot meal combining tender orzo pasta, fresh broccoli, and melted cheddar cheese for a satisfying dish.

Ingredients

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 cups shredded sharp cheddar cheese
  • 2 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat and sauté garlic until fragrant.
  2. Add the orzo and cook, stirring frequently, for 2 minutes.
  3. Pour in vegetable broth and milk, bring to a boil.
  4. Reduce heat and simmer for 10 minutes, stirring occasionally, until orzo is tender and sauce thickens.
  5. Add broccoli florets and cook for another 3-4 minutes until broccoli is tender.
  6. Stir in shredded cheddar cheese until melted and creamy.
  7. Season with salt and pepper to taste, serve hot.
