- 1 pound butternut squash, peeled and cubed

Instructions
- Preheat oven to 400°F. Roast butternut squash cubes until soft, about 25 minutes. Mash and let cool.
- In a bowl, combine mashed squash, flour, egg, salt, and pepper to form a dough. Roll into ropes and cut into bite-sized pieces to form gnocchi.
- In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same skillet, melt butter, add heavy cream, and bring to a simmer. Add cooked gnocchi to the sauce and cook until heated through, about 3-4 minutes.
- Return sausage to the skillet, toss to combine. Garnish with fresh thyme before serving.
