- 4 cups diced potatoes
- 1 pound smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400F (200C). Grease a baking dish.
- Toss diced potatoes with olive oil, salt, and pepper. Roast for 25-30 minutes until golden and tender.
- In a bowl, combine ranch dressing and shredded cheese.
- Layer roasted potatoes and sausage slices in the baking dish.
- Spread cheese mixture evenly over the top.
- Bake for an additional 10-15 minutes until bubbly and cheese is melted.
- Garnish with chopped parsley and serve hot.
