- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can sweet corn, drained
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned. Remove excess fat.
- Stir in chopped onions and garlic, cook until translucent.
- Add beef broth and corn, bring to a simmer.
- Reduce heat to low, stir in heavy cream and shredded cheese until melted and smooth.
- Season with salt and pepper, garnish with chopped green onions before serving.
Notes
- For extra spice, add diced jalapenos or chili powder.
- You can substitute heavy cream with evaporated milk for a lighter version.
