- 1 lb ground beef or diced cooked beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups corn kernels
- 2 large potatoes, diced
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 teaspoon chili powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, cook beef until browned. Remove excess fat.
- Add chopped onion and garlic; sauté until translucent.
- Stir in diced potatoes, corn, chili powder, paprika, salt, and pepper.
- Pour in beef broth and cream of mushroom soup. Simmer until potatoes are tender, about 20 minutes.
- Stir in shredded cheese until melted. Adjust seasonings as needed.
- Serve hot, garnished with additional cheese or herbs if desired.
Notes
For extra creaminess, add a splash of heavy cream. Use cooked leftover beef for quicker preparation. Garnish with chopped scallions or cilantro for added flavor.
