- 2 pounds boneless, skinless chicken thighs or breasts, cut into chunks
- 1/2 cup unsalted butter
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream
- 2 teaspoons garam masala
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place chicken chunks into the slow cooker.
- In a skillet, melt butter over medium heat, sauté onions, garlic, and ginger until fragrant.
- Add spices and cook for 2 minutes.
- Pour the spice mixture over chicken in the slow cooker.
- Pour crushed tomatoes and stir to combine.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Stir in heavy cream during the last 30 minutes of cooking.
Notes
- Adjust spice levels to taste by increasing chili powder.
- Serve with rice, naan, or your favorite side.
- For a thicker sauce, simmer uncovered for 15 minutes after cooking.
