- 1 pound ground beef or Italian sausage
- 1 jar (24 oz) marinara sauce
- 4 cups beef or chicken broth
- 1 cup lasagna noodles, broken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook ground beef or sausage in a skillet until browned. Drain excess fat.
- Add meat, chopped onion, garlic, Italian seasoning, salt, and pepper to the slow cooker. Pour in marinara sauce and broth. Stir to combine.
- Cover and cook on low for 6-8 hours.
- Thirty minutes before serving, add broken lasagna noodles to the soup. Cover and continue cooking.
- Stir in ricotta and mozzarella cheeses. Let melt, then serve hot, garnished with fresh basil and Parmesan cheese.

- Feel free to substitute ground turkey or plant-based options.
- Adjust seasoning according to taste.
- For a thicker soup, add more cheese or reduce broth slightly.
