- 1 pound Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth

- 1 package frozen tortellini
- 2 cups fresh spinach

Instructions
- Brown sausage in a skillet over medium heat, then transfer to the slow cooker.
- Add diced onion, garlic, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper to the slow cooker. Stir to combine.
- Cover and cook on low for 4 hours.
- Add tortellini and spinach to the soup, and cook for an additional 30 minutes until the tortellini are tender and spinach is wilted.
- Serve hot, topped with shredded Parmesan cheese.

- You can substitute ground chicken or turkey for sausage for a healthier option.
