Instructions
- Place diced potatoes in the crockpot and drizzle with olive oil. Season with salt, pepper, and Italian seasoning.
- Layer chicken breasts on top of the potatoes.
- In a bowl, mix minced garlic, heavy cream, Parmesan cheese, and additional salt and pepper.
- Pour the mixture over the chicken and potatoes.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and potatoes are tender.
- Garnish with chopped parsley before serving.
