- 8 oz (225 g) of pasta (penne or spaghetti)
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add diced tomatoes with their juice, and cook for 5 minutes to soften and reduce slightly.
- Stir in heavy cream and Parmesan cheese, cooking until the sauce thickens, about 3-4 minutes.
- Season with salt and pepper, then add cooked pasta to the skillet and toss to coat.
- Garnish with chopped basil and extra Parmesan before serving.
