Ingredients

  • 1 pound Italian sausage (casings removed)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (16 oz) package gnocchi
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned and cooked through, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add chopped onion and cook until translucent, about 3 minutes. Add minced garlic and cook for another minute.
  3. Pour in the chicken broth, bring to a boil, then add gnocchi. Cook according to package instructions until tender, about 3-4 minutes.
  4. Reduce heat to low, stir in heavy cream, Parmesan cheese, and Italian seasoning. Add cooked sausage back into the pot.
  5. Stir in chopped spinach until wilted. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh basil or parsley, and enjoy this creamy comforting soup.
