- 1 pound Italian sausage (casings removed)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (16 oz) package gnocchi
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same pot, add chopped onion and cook until translucent, about 3 minutes. Add minced garlic and cook for another minute.
- Pour in the chicken broth, bring to a boil, then add gnocchi. Cook according to package instructions until tender, about 3-4 minutes.
- Reduce heat to low, stir in heavy cream, Parmesan cheese, and Italian seasoning. Add cooked sausage back into the pot.
- Stir in chopped spinach until wilted. Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil or parsley, and enjoy this creamy comforting soup.
Notes
- For a spicier kick, add red pepper flakes with the garlic.
- You can substitute kale for spinach for a different leafy taste.
- This soup is best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
