- 1 lb Italian sausage, casings removed
- 1 package (16 oz) gnocchi
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for topping
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it apart with a spoon.
- Add chopped onion and garlic; sauté until translucent and fragrant.
- Pour in chicken broth and bring to a boil. Add gnocchi and cook according to package instructions until tender.
- Reduce heat and stir in heavy cream. Simmer for 5 minutes to thicken slightly.
- Add chopped spinach and cook until wilted. Season with salt and pepper.
- Serve hot, topped with grated Parmesan cheese and fresh herbs if desired.

- Use fresh gnocchi for best texture.
- Feel free to add red pepper flakes for a spicy kick.
- Make it vegetarian by substituting sausage with hearty vegetables or plant-based sausage.
