- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning. Sear chicken until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Stir in sun-dried tomatoes and cook for another 2 minutes.
- Pour in heavy cream, then add Parmesan cheese. Stir until the sauce thickens slightly, about 3-4 minutes.
- Add spinach and cook until wilted. Return chicken to the skillet, spoon the sauce over, and simmer for 5 minutes.
- Serve hot, garnished with additional Parmesan if desired.

- For a richer flavor, use fresh basil or parsley as garnish.
- This dish pairs well with steamed pasta or crusty bread.
