- 1 pound cooked chicken breast, diced
- 1 package (16 oz) potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add chicken broth and bring to a boil.
- Stir in gnocchi and cook for about 3-4 minutes until they float.
- Reduce heat to low, add heavy cream, cook for 5 minutes, stirring occasionally.
- Mix in cooked chicken, spinach, salt, pepper, and red pepper flakes if using. Simmer for another 5 minutes.
- Serve hot with crusty bread and enjoy!
Notes
- For added flavor, sauté vegetables before adding broth.
- You can substitute cooked turkey or tofu for chicken.
- Use fresh spinach for best color and flavor.
