- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 package (16 oz) potato gnocchi
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until translucent.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and gnocchi; cook according to package instructions, usually about 3-4 minutes.
- Stir in chopped spinach and cook until wilted.
- Reduce heat and add heavy cream, stirring until well combined. Season with salt and pepper.
- Simmer for 5 minutes, then serve hot garnished with fresh herbs if desired.
Notes
- You can substitute cooked turkey for chicken for a different flavor.
- For a thicker soup, add a tablespoon of flour or cornstarch dissolved in cold water.
