Ingredients

  • 1 pound Italian sausage, crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery until vegetables are tender.
  3. Return sausage to the pot, add chicken broth, and bring to a boil.
  4. Reduce heat and stir in heavy cream and Parmesan cheese. Simmer for 10 minutes, stirring occasionally.
  5. Season with salt and pepper. Garnish with fresh parsley before serving.
