- 8 oz pasta (penne or fettuccine)
- 2 cups fresh spinach
- 1 cup sliced mushrooms

- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese

- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add mushrooms and cook until tender, about 5 minutes.
- Add garlic to the skillet and sauté for 1 minute until fragrant.
- Stir in heavy cream and Parmesan cheese, cooking until the sauce thickens slightly.
- Add spinach and cook until wilted, about 2 minutes.
- Combine cooked pasta with the sauce, stirring well. Season with salt and pepper.
- Serve hot, garnished with extra Parmesan and herbs if desired.
