- 12 oz (340 g) pasta (penne or spaghetti)
- 1 cup fresh basil pesto
- 1/2 cup grated Parmesan cheese
- 2 cups cherry tomatoes, halved
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup pine nuts (optional)
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
- In the same pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook for 2-3 minutes until slightly softened.
- Return the cooked pasta to the pot. Stir in pesto and Parmesan cheese until well coated.
- Garnish with pine nuts, additional Parmesan, and fresh basil if desired. Season with salt and pepper.
