- 20 large pasta shells
- 1 lb cooked crab meat or shrimp, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced sun-dried tomatoes
- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Cook pasta shells in boiling salted water until al dente, drain and set aside.
- In a skillet, heat olive oil and sauté garlic until fragrant. Add chopped seafood and cook until just done.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, sun-dried tomatoes, cooked seafood, salt, and pepper.
- Stuff each shell with the seafood mixture and place in a baking dish.
- In a saucepan, heat heavy cream and pour over the stuffed shells. Cover with foil and bake for 25 minutes.
- Remove from oven, garnish with parsley, and serve warm.
Notes
- You can substitute shrimp or crab with scallops or lobster.
- For a less creamy version, skip the heavy cream or use half-and-half.
- Serve with a side of garlic bread or salad for a complete meal.
