- 2 lbs beef stew meat, cubed
- 1 can (13.5 oz) coconut milk
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
- Cooked rice for serving
Instructions
- Heat olive oil in a skillet and brown the beef cubes on all sides. Transfer to the slow cooker.
- In the same skillet, sauté onions and garlic until fragrant, then add curry powder, turmeric, paprika, and cayenne. Cook for 2 minutes.
- Pour the spice mixture over the beef in the slow cooker. Add coconut milk, season with salt and pepper.
- Cover and cook on low for 6-8 hours until beef is tender and flavors meld.
- Garnish with fresh cilantro before serving over rice.
