Discover how to make crispy, cheesy smashburger quesadillas for a quick and satisfying 20-minute dinner. Perfect for busy weeknights, this recipe combines the crunch of a crispy quesadilla with savory smashburger flavors, layered with melted cheeses and optional toppings for a delicious meal kids and adults will love.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 2 cups cooked and crumbled smashburger beef (or seasoned ground beef)
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon olive oil or butter
  • 1 small onion, diced (optional)
  • 1 small tomato, diced (optional)
  • Fresh cilantro for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Begin by cooking your ground beef or smashburger beef with diced onions, salt, and pepper in a skillet over medium heat. Cook until browned, then crumble into small pieces and set aside.
  2. Lay a flour tortilla flat on a surface. Spread half of the cooked beef over one half of the tortilla. Top with shredded cheddar and Monterey Jack cheese. Add diced tomatoes and cilantro if using. Fold the tortilla over to enclose the filling.
  3. Heat a tablespoon of olive oil or butter in a large skillet over medium heat. Carefully place the assembled quesadilla into the skillet. Cook for 3–4 minutes per side, pressing gently, until golden and crispy, with cheese melted.
  4. Remove from skillet and let rest briefly before slicing. Repeat with remaining ingredients.

Notes

  • Use a non-stick skillet for easier flipping and to prevent sticking.
  • Brush the outer edge of the tortillas with more butter for extra crispiness.
  • Freshly grated cheese melts more evenly, enhancing flavor.
  • Add hot sauce or sour cream as a finishing touch for extra flavor.
