Instructions
- Begin by cooking your ground beef or smashburger beef with diced onions, salt, and pepper in a skillet over medium heat. Cook until browned, then crumble into small pieces and set aside.
- Lay a flour tortilla flat on a surface. Spread half of the cooked beef over one half of the tortilla. Top with shredded cheddar and Monterey Jack cheese. Add diced tomatoes and cilantro if using. Fold the tortilla over to enclose the filling.
- Heat a tablespoon of olive oil or butter in a large skillet over medium heat. Carefully place the assembled quesadilla into the skillet. Cook for 3–4 minutes per side, pressing gently, until golden and crispy, with cheese melted.
- Remove from skillet and let rest briefly before slicing. Repeat with remaining ingredients.

- Brush the outer edge of the tortillas with more butter for extra crispiness.
