Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9×13 inch baking dish. Bake for 10 minutes.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Fold in diced apples.
  3. Pour batter over crust and bake for 35-40 minutes until set. Cool completely.
  4. Spread caramel sauce evenly over the cooled cheesecake layer. Drizzle with additional caramel before serving. Chill for at least 2 hours before slicing.
