Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 16 oz ricotta cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup mini chocolate chips
  • 2 cups heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch pie dish. Bake for 10 minutes and cool.
  2. In a bowl, combine ricotta, powdered sugar, vanilla, and cinnamon until smooth.
  3. Whip heavy cream until stiff peaks form. Fold into ricotta mixture gently.
  4. Fold in mini chocolate chips.
  5. Pour filling into cooled crust and refrigerate for at least 4 hours or until set.
  6. Garnish with additional chocolate chips and optional dusting of powdered sugar before serving.
