A flavorful baked French toast casserole loaded with fresh blueberries, baked until golden and crispy, topped with powdered sugar and served with syrup.

  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 6 slices of day-old bread, cubed
  • 2 cups fresh blueberries, divided
  • 4 large eggs
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar for dusting
  • Syrup for serving

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Arrange bread cubes and half of the blueberries in the dish.
  3. In a mixing bowl, whisk eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
  4. Pour the egg mixture evenly over the bread and blueberries.
  5. Top with remaining blueberries and gently press down to absorb the custard.
  6. Bake for 40-45 minutes until golden and set.
  7. Allow to cool slightly, then dust with powdered sugar and serve with syrup.

Notes

  • Use day-old bread for best results. Stale bread absorbs the custard better.
  • Feel free to add chopped nuts or a splash of lemon zest for extra flavor.
  • Serves well with whipped cream or extra fresh berries.
