Ingredients
Scale
- 6 slices of day-old bread, cubed
- 2 cups fresh blueberries, divided
- 4 large eggs
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Powdered sugar for dusting
- Syrup for serving
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Arrange bread cubes and half of the blueberries in the dish.
- In a mixing bowl, whisk eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
- Pour the egg mixture evenly over the bread and blueberries.
- Top with remaining blueberries and gently press down to absorb the custard.
- Bake for 40-45 minutes until golden and set.
- Allow to cool slightly, then dust with powdered sugar and serve with syrup.
Notes
- Use day-old bread for best results. Stale bread absorbs the custard better.
- Feel free to add chopped nuts or a splash of lemon zest for extra flavor.
- Serves well with whipped cream or extra fresh berries.
