Ingredients

  • 2 boneless chicken breasts, sliced
  • 8 oz chow mein or similar noodles
  • 1 cup bell peppers, thinly sliced
  • 1 cup carrots, julienned
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • Sesame seeds for garnish

Instructions

  1. Cook the noodles according to package instructions; drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Remove chicken from skillet and set aside. In the same skillet, add garlic and stir-fry for 30 seconds.
  5. Add bell peppers and carrots, cook for 3-4 minutes until tender-crisp.
  6. Return chicken to the skillet, add noodles, soy sauce, oyster sauce, and sesame oil. Toss well to combine and heat through.
  7. Garnish with sliced green onions and sesame seeds before serving.
