- 1 1/2 cups orzo pasta
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups cherry tomatoes, halved
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Grease a baking dish.
- Cook orzo pasta in salted boiling water until al dente, then drain.
- In a large mixing bowl, combine cooked orzo, cherry tomatoes, spinach, garlic, olive oil, oregano, salt, and pepper.
- Transfer mixture to the prepared baking dish, top with shredded mozzarella and Parmesan cheeses.
- Bake for 20-25 minutes until bubbly and golden on top.
- Garnish with fresh herbs if desired, and serve hot.
