- 2 tablespoons raspberry jam
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together butter and sugar until light and fluffy.
- Add egg and vanilla; mix well.
- Gradually add flour, mixing until just combined.
- In a small bowl, mash raspberries and mix with raspberry jam.
- Divide dough in half; roll each into a rectangle on a floured surface.
- Spread raspberry mixture over one rectangle, then layer the second on top.
- Slice into cookies and place on prepared baking sheet.
- Bake for 12-15 minutes or until golden brown.
