- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 cup diced pineapple chunks
- Chopped green onions for garnish
Instructions
- Place chicken in the crockpot.
- In a bowl, mix pineapple juice, soy sauce, honey, garlic, and ginger.
- Pour the sauce over the chicken.
- Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
- Shred the chicken and mix well with the sauce.
- Stir in pineapple chunks during the last 30 minutes of cooking.
- Serve hot, garnished with chopped green onions.
Notes
- You can substitute chicken thighs for breasts for extra juiciness.
- For a thicker sauce, remove chicken and simmer the sauce in a pan until it reduces.
