- 1 onion, chopped
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 package (9 oz) refrigerated tortellini
- 1 cup fresh basil, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for topping
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and cook for 1 minute.
- Pour in diced tomatoes and vegetable broth, bring to a boil.
- Reduce heat and simmer for 10 minutes to develop flavors.
- Add tortellini and cook according to package instructions until tender, about 3-4 minutes.
- Stir in chopped basil and season with salt and pepper.
- Serve hot, topped with grated Parmesan cheese.
Notes
- You can substitute fresh basil with dried if needed.
- For a spicier version, add red pepper flakes during cooking.
