Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, beat softened butter and sugar until creamy.
- Add egg and vanilla, mix well.
- In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
- Add dry ingredients to wet ingredients gradually, mixing until combined.
- Fold in chopped apples.
- Mix cinnamon and sugar in a small bowl. Scoop tablespoon-sized dough balls and roll in cinnamon-sugar mixture.
- Place on baking sheets and flatten slightly.
- Bake for 10-12 minutes or until edges are golden brown.
- Allow cookies to cool on a wire rack before serving.

- Adjust apple quantity for desired fruitiness.
