Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Toss the sliced peaches with a tablespoon of brown sugar and a pinch of cinnamon or nutmeg.
- In a medium bowl, whisk together flour, baking powder, salt, and remaining brown sugar.
- In a large bowl, beat the eggs, add melted butter and vanilla; mix until smooth.
- Gradually stir dry ingredients into the wet mixture until just combined.
- Pour half of the batter into the prepared pan, layer half of the peaches, then repeat.
- Bake for 40-45 minutes, or until a toothpick comes out clean. Let it cool slightly before serving.
