A hearty and easy-to-make baked chicken and rice dish flavored with aromatic herbs and topped with refreshing tzatziki sauce, perfect for weeknight dinners.

Ingredients

  • 2 cups cooked rice
  • 1 lb boneless chicken breasts, diced
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 garlic cloves, minced
  • 2 tbsp chopped fresh dill
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and cook diced chicken until browned and cooked through. Season with salt and pepper.
  3. Mix Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper to make tzatziki sauce.
  4. In a baking dish, combine cooked rice, cooked chicken, and half of the tzatziki. Mix well.
  5. Spoon remaining tzatziki over the top of the casserole.
  6. Bake in the oven for 20-25 minutes until heated through and bubbly.
  7. Serve hot garnished with extra dill or cucumber slices if desired.
