- 2 cups cooked rice
- 1 lb boneless chicken breasts, diced
- 1 cup Greek yogurt
- 1 cucumber, grated
- 2 garlic cloves, minced
- 2 tbsp chopped fresh dill
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and cook diced chicken until browned and cooked through. Season with salt and pepper.
- Mix Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper to make tzatziki sauce.
- In a baking dish, combine cooked rice, cooked chicken, and half of the tzatziki. Mix well.
- Spoon remaining tzatziki over the top of the casserole.
- Bake in the oven for 20-25 minutes until heated through and bubbly.
- Serve hot garnished with extra dill or cucumber slices if desired.
Notes
- Adjust the amount of garlic and dill according to taste.
- For a vegan version, substitute chicken with tofu and use plant-based yogurt.
