  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1 cup heavy cream or Greek yogurt for a lighter option
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley or basil for garnish
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced chicken breasts, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic until fragrant, about 30 seconds. Stir in the lemon zest.
