- 4 tilapia fillets
- 2 red peppers, roasted and peeled
- 1 yellow pepper, roasted and peeled
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Roast the red and yellow peppers untilcharred, then peel and chop.
- In a blender, combine roasted peppers, garlic, olive oil, lemon juice, salt, and pepper. Blend until smooth.
- Season tilapia fillets with salt and pepper. Heat a skillet over medium-high heat with a little olive oil.
- Cook fillets for 3-4 minutes on each side until flaky and golden.
- Serve the fish topped with the roasted pepper sauce and garnished with parsley.
Notes
- Adjust the spice level by adding chili flakes to the sauce.
- Can be served with rice or steamed vegetables for a complete meal.
