- 1.5 pounds beef chuck, cubed
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 cup potatoes, diced
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot or cauldron over medium heat.
- Brown the beef cubes until seared on all sides, then set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Add carrots, celery, and potatoes, cook for 5 minutes.
- Return beef to the pot, pour in beef broth, and add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
- Garnish with fresh parsley before serving.

- You can add mushrooms or peas for extra flavor and nutrition.
- Use a slow cooker for convenience: cook on low for 6-8 hours.
