- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 cup diced apples
- 1/2 tsp cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat oven to 325°F and prepare mini muffin tin with paper liners.
- Mix graham cracker crumbs and melted butter, then press into the bottom of each liner.
- Beat cream cheese, sugar, and vanilla until smooth.
- Add egg and mix until well combined.
- Fold in diced apples and cinnamon.
- Spoon mixture over crusts, filling each liner about 3/4 full.
- Combine brown sugar and a pinch of cinnamon for the crumble topping.
- Sprinkle topping over each cheesecake.
- Bake for 20-22 minutes until set and golden around edges.
- Cool completely and refrigerate before serving garnished with fresh apple slices.
