Ingredients
Scale
- 1 lb (450g) ground beef or sirloin, sliced into strips
- 1 cup long-grain rice or jasmine rice
- 1 zucchini, chopped into small cubes
- 1 small red onion, diced
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley or mint, chopped (for garnish)
- Feta cheese crumbles (optional)
Instructions
- Prepare the ingredients by chopping the zucchini, dicing the onion, mincing garlic, and halving cherry tomatoes.
- Cook the rice according to package instructions; set aside.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef, season with oregano and cumin, and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté onion and garlic until fragrant, about 2-3 minutes. Add zucchini and cook until tender, about 5 minutes.
- Return beef to the skillet, add paprika, salt, and pepper. Stir in cherry tomatoes and cook for 2 minutes until softened.
- Serve the beef and vegetables over rice. Garnish with herbs and feta cheese if desired. Drizzle with olive oil or add lemon juice for extra flavor.
Notes
- Use fresh herbs and quality spices to maximize flavor.
- Adjust spice levels with cayenne or chili flakes to suit your taste.
- Replace beef with chicken, turkey, chickpeas, or grilled tofu for a vegetarian version.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat thoroughly before serving, adding a splash of water if needed to keep rice moist.
