- 8 ounces spaghetti
- 2 cups fresh spinach leaves
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add cherry tomatoes and cook until they begin to soften, about 2-3 minutes.
- Stir in spinach and cook until wilted, about 1 minute.
- Combine cooked pasta with the vegetable mixture. Toss well to coat.
- Serve topped with Parmesan cheese and fresh basil. Season with salt and pepper to taste.
Notes
- You can add red pepper flakes for a spicy kick.
- For extra protein, toss in cooked chickpeas or grilled chicken.
