- 4 large bell peppers
- 1 lb ground beef or chicken
- 1 packet taco seasoning
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced tomatoes
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Sour cream and fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until fragrant.
- Add ground beef or chicken and cook until browned. Stir in taco seasoning and cooked rice.
- Stuff each pepper with the meat mixture and place in a baking dish.
- Top with shredded cheese and bake for 25-30 minutes until peppers are tender and cheese is melted.
- Garnish with diced tomatoes, sour cream, and cilantro before serving.
Notes
- You can substitute ground beef with turkey or plant-based protein.
- For a healthier twist, use low-fat cheese and brown rice.
