- 4 salmon fillets
- 2 ripe mangoes, diced
- 1 red bell pepper, diced

Instructions
- Preheat oven to 400°F (200°C).
- Season salmon fillets with salt and pepper.
- Place salmon on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes until cooked through.
- Meanwhile, prepare the mango salsa by combining diced mango, red bell pepper, onion, cilantro, lime juice, olive oil, salt, and pepper in a bowl.
- Once salmon is baked, top each fillet with the fresh mango salsa.
- Serve immediately with a side of greens or rice.

- For extra flavor, add a dash of chili powder to the salsa.
- Use fresh, ripe mangoes for the best taste.
